Cottage Cheese and Yogurt is my Jam.

During the month of January my mom and I ran 125 miles. It was just the beginning of our training program for the marathon we have ahead of us on June 1st. My goal for this marathon is to run it in 4 hours flat and not to gain a ton of weight while we train (because last time I did). 
So, I realized that I needed to start finding healthy ways to reward myself. And, this parfait is the way. Creamy and good like ice cream, but healthier. Sweet and tart like gelato, but healthier. I think it's the interaction between the sweet yogurt and salty cottage cheese, the tart berries and sweet bananas. It's DE-LISH-IS. 

I take this puppy to go every morning and enjoy it while I'm getting settled in at work. There's something so relaxing about not rushing through my breakfast before I run out the door and this mason jar treat is JUST RIGHT.

I'm going to try it with chocolate protein powder in the mix and bananas. And with some PB2 and semi-sweet chocolate chips. And with peaches and honey. Oh, the possibilities.

  2. 125 miles in a month?? Dang girl- that's amazing!! Cottage cheese always kind of weirds me out- but I think I could get behind it when it's mixed with Greek yogurt!

  5. okay, not gonna lie, couldn't do the cottage cheese PLUS the greek yogurt, texture overload (especially right now). but that looks super delish. also, good for you for the marathon goal girl!

  8. I haaate that I don't like greek yogurt! My husband is obsessed with it + granola and I always want to like it but I can't get past the texture! Love the idea of this in the mason jar for on the go!

  9. Oh how I love yogurt parfait! I've actually been getting them a few mornings over the past couple of weeks from Chick-fil-a but you, my dear, have inspired me! I went to the grocery store on my way home and picked up some granola and yogurt to make my own! I can't wait for tomorrow just so I can eat it!

  10. RIGHT? The protein powder needs some serious stirring to get all blended in, but then, HEAVEN. And seriously, it's like ice cream which makes me feel so happy.

  11. I crave cottage cheese... Is that insane? And it helps cut the sweetness of the yogurt, which is 100% what I needed to fall in love with it. Now, between this and fried eggs my cravings might make you think I'm pregnant! (though I'm not)

  14. Oh girl, my mom ONLY ate cottage cheese when she was pregnant with me! So funny how we're all different in tastes.
