White Chocolate Macadamia Nut Cookies

Growing up my dad's idea of a fancy dinner when mom wasn't home was pizza
or if we protested, he'd go for Subway. 
Going to Subway meant that dinner was going to be followed with their
"freshly baked" cookies. 
Although the "freshly baked"ness of them was highly questionable,
we were always thrilled to munch on their white chocolate macadamia nut cookies.

While we were in Hawaii I scored a big ol' bag of Hawaiian macadamia nuts
and there was no way I could resist one-upping Subway's "fresh baked" bit. 
These did not disappoint. 
In fact, I got requests for more... 
(Talk about complimenting me)

Yes, that plate really does say one tough cookie. Oh Target, I adore you!

1 cup butter, room temperature
1/4 cup sugar
3/4 cup brown sugar
1 package instant vanilla pudding
1 egg
1 teaspoon vanilla
1/4 cup sour cream or plain yogurt
(I had kefir on hand so I used that!)
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups white chocolate chips
3/4 cup chopped macadamia nuts

1. Beat butter and sugars together in a standing mixer until fluffy. 
2. Add pudding mix, egg, yogurt/sour cream and vanilla. 
3, Add flour, baking soda, and salt. 
4. Stir in white chocolate chips and chopped macadamia nuts. 
5. Spoon onto parchment paper lined baking sheets. 
6. Bake at 375 f for 7-10 minutes. 
7.  Let cool as long as you can resist on a wire baking rack. 
8. Enjoy! 

I served these tasty cookies with coconut milk (in my mason jar mug) and 
I may have consumed 2 or 4 or 8...

  1. The recipe calls for 1 box of vanilla pudding. I bought a big box, it says 6 1/2 cup servings (5.25 oz) is that the right amount?
